How to Prepare a Fresh Lobster

1. Gather Your Tools and Ingredients

Before you begin, gather all the necessary tools and ingredients. You will need a large pot, a heavy-duty chef’s knife, a lobster cracker, a lobster pick, a cutting board, and a bowl of ice water. Additionally, you will need a fresh lobster, which can be purchased from a fish market or seafood counter.

2. Boil the Lobster

Start by bringing a large pot of salted water to a rolling boil. The water should be about 2 inches deep. Once the water is boiling, gently place the lobster in the pot. The lobster should be fully submerged. Boil the lobster for about 10 minutes per pound of live weight. For example, a 1-pound lobster should be boiled for 10 minutes.

3. Test for Doneness

After the boiling time has elapsed, use a lobster pick to test for doneness. Insert the pick into the shell and twist it to the side. If the shell opens easily, the lobster is done. If it is still difficult to open, continue boiling for an additional 2-3 minutes and test again.

4. Remove the Lobster from the Pot

Once the lobster is done, remove it from the pot using a pair of tongs. Place the lobster in a bowl of ice water to stop the cooking process and to keep it cool. This will also make it easier to handle when you are ready to crack it open.

5. Crack the Lobster

Take the lobster and place it on a cutting board. Use the lobster cracker to crack the shell along the middle of the lobster. Be sure to wear gloves to protect your hands, as the shell can be sharp. Once the shell is cracked, use the lobster pick to remove the tail and the body from the shell.

6. Remove the Lobster Meat

Using the lobster pick, remove the meat from the tail and the body. The tail meat is located in the center of the tail, while the body meat is found in the claws and legs. Be sure to remove all the meat, including the roe (the eggs) if desired.

7. Serve and Enjoy
